Withdrawing material from inventory
The withdrawal posting on the inventory page — with or without an order reference. And why the order reference makes all the difference.

On the inventory page, material is booked out using the "Withdrawal" posting type — in the "Inventory Booking" form (sidebar → Inventory → "Articles" tab → "Book" in the article row). Just enter the quantity as a positive number — Gantway automatically counts it as an outgoing movement. By default, Admin, Planner and Purchasing/Warehouse may post in the inventory.
With or without an order
The "For order (optional)" field assigns the withdrawal to an order. Only active orders are available for selection — that is, in status Released or In progress.
The reference is more than a comment: an assigned withdrawal is credited against the order's open material requirement. Afterwards, the order "knows" that its material has already been pulled.
Distinction: withdrawal within the order
There is a second way: the withdrawal directly on the order's "Material" tab (sidebar → Orders → open the order). It is open to employees without inventory access as well. Additional checks apply there per material line item; details in the article Withdrawing material for an order. The inventory withdrawal here is the quick, unrestricted route for all other cases.
